Reminder: wash your hands before you start cooking

Ingredients:

1                   Onion julienned (cut lengthwise)

4                   Tomatoes

1cup             Pasta or a fistful of spaghetti

1tbsp            Oil

3-4 cloves    Garlic diced or crushed

Salt to taste

Black pepper / Red chilli flakes to taste


Optional:

Basil

Cheese

Oregano

I use spaghetti or macroni with this recipe. I prefer to make it without cheese and oregano. 


I like my food spicy; sometimes, I add a tad bit of habanero sauce to the pasta sauce to add a punch.

Method:

Pasta 

Boil pasta as per on directions package


Pasta Sauce

While the pasta is boiling make the sauce - 

  1. Warm up the pan on medium heat

  2. Add oil and heat for a minute or so until warm

  3. Add garlic and cook until fragrant (but before it becomes brown). About 30 secs or so.

  4. Add onions and sauce until translucent. About 2 - 3 mins

  5. Add basil.

  6. Crush tomatoes with hand into the pan (be careful not to splash across the counter; piercing with a knife minimizes the chances of this happening)

  7. Add salt to taste. I would start with a 1/4 tsp and go from there

  8. Cook for another 5 - 7 mins until tomatoes are soft

  9. Add pasta and let it simmer for a 3-4 min. Stir occasionally.

  10. Add your favorite cheese and stir for a couple mins. Turn off the heat.

  11. Sprinkle black pepper or red chilli flakes, oregano to taste


Pasta is ready!
