Ingredients:

1/2 cup         Yogurt

1/2 cup         Cold water


For Lassi - 

Sugar to taste

Mango or other fruit puree to taste


For Chaas - 

5-6 leaves     Cilantro 

3-4 leaves     Green Mint

1/4 tsp          Cumin powder

1/4 tsp          Ginger chili paste (optional)  


Salt to taste

Rock salt to taste

Yogurt is a versatile base for many sweet and salty drinks around the world. It is used as a base for smoothies, lassi, ayran, doogh, chaas. Here we explore both the sweet and salty versions from India.

Method:

Lassi -

This is usually thick and sweet, like smoothie consistency. 

  1. Mix 1/4 cup water, 1/2 cup yogurt, sugar in a blender. If your using Greek yogurt you may need to add a little more water. 

Optional

Add mango and couple seeds of cardamom and blend for mango lassi. Top it with a sprig of mint. 


Lassi can also be salty. But in that case skip the fruits and sugar.


Chaas - 

It usually has the consistency of a frothy coffee.

  1. Mix 1/2 cup water, 1/2 cup yogurt, salt, rock salt and cumin powder in a blender. If your using Greek yogurt you may need to add a little more water.

Optional

Blend cilantro, mint and ginger chili paste along with the ingredients for masala chaas.
